豚骨十割。
北九州市内で緑色の暖簾を掲げる"ぎょらん系"ラーメンの原点、ぎょらん亭を初訪問。
基本メニューは、「どろ 680円」「豚骨十割 580円」「豚骨二八 580円」の三種類。
どろは濃厚な豚骨スープ、二八は鶏ガラスープが2割入っていているということで、基本と思われる豚骨十割を注文。
コクのあるスープだけど、「ドロドロ」「ギトギト」とも異なり、意外とサラッとしている。
麺が太麺で、硬さを指定しなかったら、若干柔らかめで、しかもダブルで注文してしまったものだから、少し後悔。
次に訪れる機会があれば、麺は硬めにしよう。「どろ」も気になるけれど、魚介スープを加えるオプションも気になる･･･。
何度も訪れてみたくなる名店です。

ぎょらん亭 本店を再訪。北九州市内を中心とした
『ぎょらん系』と呼ばれる豚骨ラーメンの流派？の
原点となるお店。
12時過ぎに訪れると、意外と空席が多かったものの
すぐに満席に。流石、人気店です。
食券制で、豚骨ラーメンだけでも豊富なメニュー。
豚骨と鶏清湯のスープの比率の異なる二八・三六・
十割ラーメン(780円)、どろラーメン(880円)の他に
本店限定どろどろラーメン(1,180円)もありました。
麺の硬さだけでなく、細麺か中太麺か選べます！
どろラーメン、麺の硬さは普通で注文しました。
（どろラーメンは、中太麺のみでした。）
無料トッピングの辛子高菜と紅生姜が置いてあり、
ラーメンの提供を待つ間に辛子高菜を取りました。
どろラーメンは名前の通り、濃厚クリーミーな豚骨
スープですが、臭みが全くありません。
具材は、厚切りチャーシュー1枚と青葱、キクラゲ、
ラードのようなものが盛り付けられていました。
(年齢的に、ラードは無くても良かったな。苦笑)
麺は中太ストレート麺。茹で加減は｢普通｣でも、
やや硬めに感じました。
替玉(180円)は、やわ麺で注文。金属製のボウルに
熱々のやわ麺。個人的には正解の茹で加減でした。
申し訳程度の青葱とキクラゲ2本に失笑。
辛子高菜も投入して、美味しく頂きました。
スープの種類、麺の太さ(細麺or中太麺)、麺の硬さ
など、選択肢が多いので自分好みを見つけるまでが
大変かもしれません。
｢一番人気はどれ？｣と店員さんに尋ねるお客さんが
いましたが、自分の情報(豚骨を食べ慣れているか
どうか、こってりが好きかあっさりが好きか)を
伝えなければ、参考にもならないだろうな…。
今のところ、どろラーメンのやわが一番好きですが、
どろラーメン(880円)と替玉(180円)で1,060円は
高過ぎる気も…。機会があれば再訪します。
