肉バルや焼肉屋、ステーキハウスは沢山ありますが、居酒屋よりもワンランク上で割烹の雰囲気を保ちながら肉料理をメインにする人気のお店と聞きます。仕入れるのは和牛がメインであり、一番人気の極上和牛レアかつはリブロースの芯の部位だけを使う贅沢な一品で薄衣を纏った肉の断面はまさにピンク色です。岩塩で食べると口の中で脂の旨味と赤身の旨味を存分に味わう事が出来ます。蕩ける旨さは言うまでもありません。これも脂のくどさが無い証拠でしょうね。雲丹とイクラを載せた和牛宝石握りも至高の味でした。わざわざ遠征した甲斐がありました。
