伊藤商店の金の中華そば、美味しかったです。スープは鶏ガラがやや強め、かすかに豚骨を感じる繊細なスープです。スープを口に含むと、煮干しまたはアゴ（トビウオ）と貝類の旨味が口の中に余韻として残ります。麺は喜多方市の製麺所である曽我製麺のやや細めの中太麺です。福島市で喜多方市の製麺所の多加水麺をいただけるのは大変貴重です。曽我製麺特有のモチモチ感が最大限に楽しめる絶妙なゆで加減での提供となります。チャーシューはやや噛み応えを残しながらも脂身の部分が口の中で溶け、噛むごとに肉の旨味が口の中に広がります。ホウレンソウも名脇役でバツグンのアクセントとなっています。最初はやや塩味を強めに感じますが、徐々にまろやかになる過程は喜多方方程式そのものです。福島市でいただく喜多方ラーメン、おすすめです。
