Used at family celebrations
My daughter will be attending college in Tokyo this spring, so we invited her mother from Yamagata to have a family celebration at ``Ichii.'' I was impressed by the steamed clam chawanmushi! The egg wash in the chawanmushi also soaks in the clam extract, so eating it with the clams on top is the best! Impressed by Isobe-yaki flat shellfish! Sliced flat shellfish are grilled until aromatic, wrapped in soy sauce and seaweed, and served hot! The texture is new to me, and the aroma and indescribable deliciousness! My mother said, ``I've never eaten a whole abalone! There's a sweet sea urchin on it!! ︎” “Kobako crab?” It must be hard to peel off the meat, outer roe, and inner roe.'' ``This is my first time eating striped horse mackerel!! I was impressed with Ichii's cooking from beginning to end. I was surprised that my mother, who is over 70, ate the entire meal even though she usually eats less! ️Thank you for the meal.
Soft-shelled turtle liver
I came to the store with a reservation at 6pm on weekdays. Since work is about to begin, you can also see company-related groups. I think ``Ichii'' is the perfect place for entertainment and business negotiations. It's not as difficult to enter as it is at high-end restaurants, so you can casually chat with the owner and staff, and you can even ask about the drinks you'd like to have together. And the dishes using dashi soup are very delicious. The same goes for miso soup, it has a seasoning that makes you feel relieved! ︎ This time I had the liver of a soft-shelled turtle for the first time in my life ♪ It had no odor at all, had a sweet and mellow taste, and was it like chicken? ? Poi? The master also said he would cut softshell turtles, and being able to eat the liver was a very valuable experience.
Every single New Year's dish you'll never get tired of
For this year's osechi, I asked ``Ichii''. I made a reservation with 5 to 6 servings because I wanted my mother at home to try it too. There's a lot to choose from, from standard New Year's dishes to dishes you can't usually eat! ︎ There are things hidden under the crab legs that you can't tell from just looking at the photo from directly above, such as a dish containing loosened crab meat, mitsuba, and gari. There will be 2-3 items left. That's all I've eaten this year! ︎!! ︎ I asked for the tessa separately and borrowed the whole platter. My mother, myself, and my son were all surprised at the size of the plates Σ('◉⌓◉') The puffer fish and homemade ponzu sauce were delicious, and my mother enjoyed eating them as well. Thank you for the meal, Mr. Ichii. We look forward to your continued support in 2024.
Phantom Doman Crab
In early summer, my master and I talked about crabs, and I really wanted to try ``Doman Crab.'' I asked him to let me know when the stock arrived, and this time I was able to eat Doman Crab for the first time. Deep red steamed(?) Doman crab from Lake Hamana...I forgot to take a picture of the whole thing...It has a rich flavor and sweetness that is different from snow crab.And this is it! There is a lot of Uchiko in it considering the size of the shell. It was a delicious experience ♪ Thank you, Mr.
今年初物の秋刀魚は肝醤油で
息子も20歳になり、一緒にお酒が飲めるようになりました。まだまだお子ちゃまで、レモンサワーだのオレンジ何とかだの甘いお酒ばかりですね(*≧∀≦*)
夏休みももうすぐ終わり、講義が始まる前に日頃カップ麺の生活をしている大学生の息子を連れてお邪魔しました。

マンボウの腸の味噌漬けはコリコリしててお酒にピッタリ
カツオのお造りは玉ねぎ醤油で
にんにくと違い胸焼けがなく、匂いも無い
にんにくより好きかも
秋刀魚の刺身は今年初!
秋刀魚の肝で食べるのですが、苦手があってこれまた美味しい
そして、松茸とハモのしゃぶしゃぶ
お出しに松茸の風味と味が染み込んで、その中でハモをしゃぶしゃぶ(*≧∀≦*)
スープまで全部頂きました。

今回は大好きな新政酒造さんのNo.6を美味しい料理と一緒に頂きました。
老舗の酒屋さんでも店頭ではなかなかお目にかかれない日本酒ですし、寿司 割烹 小料理 日本料理 と掲げているお店でも置いてる所は少ないですね。
前々回⁉︎は親方の粋な計らいでカウンターで隣に座ってるお客さんとNo.6をシェアした事もありました。
1本の日本酒がきっかけで一期一会の出会いっていいもんですね。
それといち井さんではお客様の好みに合った日本酒を提供してくれます。

長崎五島列島産牡蠣
濃厚で牡蠣独特の匂いもなく、牡蠣本体の塩味だけで美味しい。
蕨と茗荷の海苔巻き
口に入れると、シャキシャキの蕨と茗荷の食感が何とも良い。しっかりと水分がとってあるので、海苔巻でもしっかり歯応えがありなんとも言えない初めての味で美味しい。
沖縄アグー豚の椀
『いち井』さんは何と言っても出汁が私好みで美味しい。
旨みたっぷりの柔らかいアグー豚と少し苦味のある芹。その上に裏ごししたお粥が掛けてある。
毎度ながらホッとする味。
あん肝のお寿司
生臭みが全然なく濃厚なあん肝をお寿司に・・・
それをパリパリの最中で挟んでパクリ!最中と言ってもしっかりとした厚みと香ばしい味わい。
予約客が会計を済ませ次々に帰ろうとすると、カウンターにいる親方に声を掛けてる。
話の内容から常連さんなのだとわかる。
