With dried shiitake mushrooms and bonito broth. ♢Cod milt It was so delicious! I was reminded that the milt of the same cod can be so different. It's soft and has no unpleasant taste, it's the best! I was a little amused when I heard "It's not just milt!" lol ♢Salmon roe and salmon roe rice This was also delicious. I want to eat it in a bowl lol ♢Ara sashimi Local real ara. It is served at a lower temperature than the lean and fatty tuna. 〇 Sumiika (squid) With salt and sudachi. 〇 Yanagigai (willow flounder) It is said to be the most delicious of the flounders. It has a chewy texture and a lingering sweetness at the end. Delicious! I didn't ask, but I'm sure it's expensive lol Apparently it's often eaten dried in the local area. 〇 Sea bream 〇 Surf clam 〇 Ark shell 〇 Horse mackerel 〇 Lean 〇 Fatty tuna It is served at a temperature a little higher than that of chutoro. The milt and willow flounder were particularly impressive! It's a bit difficult to get to from where I live, but I made a quick dash to get there. A 7-hour round trip on a regular train is hard on the back haha. Still, it was a restaurant that was definitely worth visiting! Apparently it's been appearing more on TV recently, and it was fun to hear some behind-the-scenes stories! haha
