岐阜市の外れにあるピッツェリア。

こちらのお店は窯で焼くピッツァが有名です。職人さんが世界大会で上位入賞してらっしゃるそうですよ。
カウンター席に案内され、目の前に大きな窯がありました。窯の前で職人さんが器用に生地を丸く伸ばしていきます。
木でできた大きなしゃもじのような道具に手際良くピッツァを乗せたら窯の中へ。
窯へ入れた後は金属の道具でピッツァを回転させたり、場所を変えたり。見ているのが楽しかったです。
窯へ投入された後、ほんの数分で焼きあがったピッツァ。
長時間かけて発酵させている生地は程よく水分が残っており、モチモチしてます。
大きなピッツァですが、フレッシュなバジルの香りがとても良く、完食できました。
前菜で出されたパンはピザ生地（ピッツァ生地？）を使った自家製パンであると説明してもらえました。
ピッツァは美味しいのですが、その他は普通かな。
接客が無機質な感じでした。職人さんはあまり接客が得意でないのかな？
美味しいお料理は気持ちの良い接客とセットで頂くと、幸せな気持ちになれると思います。
