1 minute walk from Gifu Station. I visited ``Sushi Hibari'' located on the 2nd floor of ``Gifu City Tower 43'', which is directly connected to Gifu Station. Sushi Hibari, which I visited in April 2021, is a sushi restaurant where you can eat authentic Edomae sushi using precious red vinegar in Gifu, a prefecture without a sea.This is my first visit since it opened. There are two types of selection courses for lunch, 4,180 yen and 5,500 yen, and two types of nigiri courses for selection, 6,600 yen and 8,800 yen, which are relatively reasonable. The interior of the restaurant is a chic, upscale space with 9 seats at the counter, which uses plenty of wood, and despite the lunch selection courses starting at 4,180 yen, there is a gap in the sense of a high-class interior. The rice is made with ``Ryu no Hitomi'' rice, and the rice is made with red vinegar, which has a sharp sourness and just the right amount of salty plum, and is cooked to a slightly firm texture. The temperature control of the ashes and seeds has improved considerably compared to when it was opened, and the seeds and seeds melt together, creating a good sense of unity. At the end of the course, young people will finish the course with nigiri hand rolls. 1 pick item, 13 nigiri pieces, a bowl, and an egg in total.
