超絶美味い✨絶妙な塩加減✨最初のペルシュウでガツンと来てタリアータまですご〜い展開✨近隣の素材を使って魔法をかける素晴らしき料理✨
名古屋駅から車で高速かっ飛ばして45分の岐阜県大垣市。濃尾平野を囲む西方の山々が近くなる。関ヶ原の古戦場まであと30分。
今日はこのディナーのために大垣駅前にホテルを取り来店。駅前ホテルからタクシーでお店まで15分 2500円程度 途中揖斐川を渡る。揖斐川水量すご〜い 東海道五拾三次 熱田から桑名まで海路なのは納得。秀吉が一夜で作った墨俣一夜城近くです♪
今日はシェフ込み2名オペレーション。オープンキッチンで全部見えます。とにかく格闘しているのが見えてただ戦場というかバタバタでした。コースとアラカルトが混在。スタート時間も人数も(6人組やカップル、おひとりの修行者など)まちまち。ほんと頭が下がります。
まずガツンとくる一皿が登場❣️日本唯一のパルマハム職人の称号を持つ多田昌豊さんのペルシュウ工場BON DABON（ボンダボン）の薄くスライスしたペルシュウを揚げパン(トルタフリッタ)といただく。超絶美味い。揚げパンとハムは相性抜群。ひさしぶりにしびれる。赤ワインのスパークリング 推薦されたランブルスコとの相性抜群。(実はイタリアビールをどうかと聞いたが逆提案)
鮮魚のカルパッチョ
敦賀港のいさき ブラータチーズ トマト 胡瓜 茄子
オリーブオイル 茄子の焼いた味わいがすごい美味しい〜 オリーブオイルはきつくない軽めな感じ ブラータチーズも寄り添う感じ いさきは浅い絶妙な焼き加減
胡瓜は夏の味
白ワインと一緒に
高加水のパンと胡桃パン 180度のオープンで温めてくれる。胡桃パンあまーい なぜ甘いか後で聞くと塩加減と胡桃本来の甘さとのこと。うーむ深い。
各務原の農園のとうもろこし 未来の冷静ポタージュと鱧のフリット ポタージュめちゃくちゃ甘く冷たくて美味しい〜 フリット程よくかりかり香ばしい。

蛸 ズッキーニ バジル 蛸の風味の残るソース
パスタを切った道具を置いてくださった

お会計8480円 この美味しさで…もはや東京都民には価格破壊すぎー✨
ただし飲んだら大垣駅タクシー行き帰り5000円強。プラスで駅前ホテルシングル8800円。シェフは岐阜県経済を揖斐川の水量並みに潤しています…笑
