店の内部はとても雰囲気良く個室もキレイです。それだけ居心地のいい店だけに辛口でいきます。
タレや薬味は店の雰囲気に合わせて上品に揃えていると思います。ザブトンやイチボを頼んだ時には、肉の味を最大限に活かそうと思っている…と思われる3種が出てきます。お肉の盛り付けはドライアイスまで使い華やかです。
ただ、肉本体がそれに見合う質と味かと言われると少々疑問です。不味いわけではありませんが。
もし肉の仕入れを変えられないんだとしたら、下味に深みのあるタレを使い、テーブル備え付けのタレも酸味を抑えたコクのあるものにしないと、満足感が得られないような気がします。ニンニク的なフレーバーを最小限に抑える意図があるんでしょうか。
逆に下味、タレ・薬味や盛り付けのゴージャスさを変えられないのだとしたら、もっと質と味の良い肉を仕入れて堂々と高級店を宣言しないと、つり合いが取れないように感じます。
以前ドラゴンハラミを注文した時、あることでさすがに店員さんに指摘をしたことがあります。
立地も良いし内観も良いのに、これまでの評価点はなぜか、ぜひ考えてもらいたいと思います。今後も行きたいからこそ。
