府中焼き（黒焼き）（850円）
府中焼き焼きを提供するお店にランチで訪問。府中焼きは広島県東部の府中市発祥のお好み焼きで、通常の広島のお好み焼きに使う豚バラ肉の代わりに、ミンチ肉を使っているのが特徴。じっくり時間をかけて焼きあげるため、ミンチから出る脂が麺に馴染んで仕上がりがぱりっぱりになる。
メインメニューの府中焼きは、焼き加減がぱりっとした黒焼きと、ふわっとした白焼きからの選択で、黒焼きでお願いする。じっくり焼くので到着まで20分程度要す。
ヘラを差し込むと表面のカリカリ具合をすぐさま感じ、食べると飴でコーティングされてるかのような歯応えを感じる。ミンチは原型がなく溶け出した成分の全てを麺とキャベツが吸収しており、抜群の旨味とコクを味わえる。これは旨い。
たまごが中に入っているので、途中の脂のコク深さをイイ感じに中和してまろやかなに味わえる。
通常のお好み焼きとはまた違ったおいしいさなので、現地で本場のお店にも行ってみたい。
