広島市内の蕎麦屋で、最寄り駅は広電本線銀山町だ。
入口の左には蕎麦打ち場があり、次いで調理場とカウンター、右は椅子席になっている。
外見は狭そうだが、中は奥に長くなっている。
蕎麦は十割で、田舎、更科、笙幻と三種類ある。
三番目の蕎麦は説明では白雪のような蕎麦らしい。
田舎を注文した。
蕎麦はプラスチックの容器に入って出てくる。
底に水が溜まっているかと思いきや実に丁寧な水切りで、微かに濡れている程度だった。
エッジが立ち、切りむらや端切れは目立たない。
蕎麦の味は田舎にしては薄い感じがするが十分に美味しい。
薬味はねぎとわさびだ。
辛汁は甘目でよくできている。
蕎麦湯は釜湯で風味はある。
微粉で打っているようなので、味がいくらか薄くなっている感じだが、蕎麦の香りはある。
ミシュランに掲載されたらしく、プレートが貼ってあった。
にしんのうま煮を注文したら、柔らかいそれではなく、昔ながらのニシンを戻したものだった。
味が濃縮していて出来が良かった。
