日曜日のお昼時に予約なしで伺いましたが、席に余裕があり、すぐに入店できました。
お蕎麦は、そばの実の部分だけを挽いた「更科そば」、殻の部分も含めて挽いた「田舎そば」に加え、独自の整合で挽いた「笙幻（しょうげん）そば」の三種類があります。私たちは、「笙幻そば・野菜天ぷら付き」と「更科そばセット」を注文しました。
驚いたのは蕎麦の光沢です。蕎麦は冷たい水でしっかり締めてあり、他のお蕎麦屋さんで見たことがない光沢を放っていました。評価ポイントに「芸術点」があるならかなりの高得点です。
また、麺のコシは韓国冷麺と良い勝負になりそうなくらいに歯ごたえがあります。日本蕎麦でここまでしっかりした麵は、食べたことはありません。
つゆや天麩羅、卵焼き、ニシンの甘煮などのおかずに関しては「普通」と思いますので、とにかくこのお店は唯一無二の麺を目と歯で楽しむお店…と思います。〆の蕎麦湯はかなりトロトロです。お店自体は一人で入っても落ち着ける雰囲気で、八丁堀・流川近くにありながらやや静か目の場所に立地していることも含め、そんな気分の時にはゆっくりできそうなお店と思います。
