広島市中区にあるラーメンの店。
高級食材によるダシのラーメンを提供。
本店は東京にあるらしい。
入店すると横に券売機があるので、そこで食券を購入して、席に着く。
カウンター席がメインとなる。
ポルチーニ塩らぁ麺は、ラーメンの1種。
ポルチーニ塩のスープのラーメン。
ポルチーニはキノコの筈なので、何故塩にその名前がついているのかは不明だが、ほぼ無色で透明の、あっさりとした味わいのスープに仕上がっていた。コクがありながらもここまで透明なスープに仕上げるには相当手間が掛かっているんだなと思わせた。
具はチャーシュー、ネギ、タマネギ、シナチクで、シンプルに纏められている。
麺は中程度の太さのストレートタイプ。
毎日食べるラーメンというより、普通のラーメンに飽きた時に食べるラーメンと言える。
