赤穴子飯特上（2,000円）
穴子専門のこちらのお店にランチで訪問。テーブル席に座りメニューを確認。メインの穴子飯は黒、赤、白の三種類。
黒は鮨屋の技法で焼き上げたぷりぷり食感、赤は煮穴子を焼いたふわとろ食感、白は本わさびと特製醤油でいただく白焼き。どれもおいしそうなので決めかねていたが、宮島の銘店「うえの」でいただいた穴子飯が焼き重視の味わいだったこと、白焼きは穴子の旨味と甘味がダイレクトに伝わりおいしいことは容易に想像できるが、お酒が欲しくなってしまう懸念があることから赤を選択し、特上でお願いする。ランクは上と特上の二種類で量の大小違いだが、料金の差が200円でありお得なのは特上。
香ばしい匂いとともに穴子飯が到着。穴子は箸で持ち上げただけで解けるほど柔らかく、口に含むと香ばしさと合わせてふっくらした穴子の凝縮した旨味がふわっと広がる。この柔らかさは半端なく、めちゃくちゃ旨い。少し甘味のあるタレは主張が控えめなため、穴子のおいしさを引き立てている。そこに山椒を入れると清涼感のあるシビれがピリッと効き、味が引き締まっていい感じ。
からの、半分ほど食べ進めたところで付け合わせのすだちを搾り入れると、上品な酸味がアクセントになって深みが加わった味に変化する。
赤はとてもおいしく大満足。黒も白も気になるので次回以降に楽しみたい。
