生麩を使ったしびれ麻婆白子（700円）
ごはんセット（350円）
原爆ドーム側からの本通入り口にあるこちらのお店にランチで訪問。2021/10にオープンしたワインとお惣菜をコンセプトにしたお店で、こだわりのワインを中心にお昼からがっつりお酒を楽しめる。
ランチメニューとしての用意は特にないため、好みの一品料理にごはんセットを合わせてセルフランチを創作するしようとメニューに目を通すも、数が多くて決められず困る。料理の写真がないため想像力を膨らませながら数分間に亘り思案する中、生麩を使ったしびれ麻婆白子にようやく決定。これをごはんセットとともにオーダー。
カウンターに着席したので厨房の調理作業がよく見える。器に醬系の麻婆の素を入れたら具材も投入し、そのまま器ごと直火で豪快に調理しており、運ばれた時には地獄の釜の様にグツグツと煮えたぎっている。
具材はメインの白子に挽き肉、ししとう、麻婆には珍しい豚バラ肉、そしてもうひとつのメインの生麩に後乗せネギのラインナップ。生麩は素揚げしてから麻婆で煮込んであるので、絹ごし豆腐のような柔らかく滑らかな口当たりに麻婆の旨味が染み込んで抜群のおいしさ。
白子はつるんと柔らかく、コクがあってこちらも旨味が弾けて半端ない。
麻婆は辛さと痺れは控えめだが、全ての具材とマッチしてご飯がどんどん進むおいしさ。
ご飯は少し硬めに炊かれているので、食感良く最高のおいしさ。濃厚な味わいの赤出汁とのセットはどんなおかずにもぴったり合うと思う。
麻婆とご飯、この組み合わせは堪らなく旨い。
