広島市中区にあるフレンチレストラン。
ニースで修業したシェフが、広島に戻り、修行していた店と同じ名の店を2016年に開業。現在に至る。
早くもミシュランガイドの広島・愛媛版に掲載されている。
厳選した地元産の食材を使う事にこだわる。
国産牛ほほ肉のニース風赤ワイン煮込みは、当店が提供する肉料理の1種。
マッシュドポテトの上に、赤ワインで煮込んだ国産の牛ほほ肉を乗せ、温野菜を添えている。
ほほ肉の上には広島県産のオレンジピールを刻んだものをトッピングする等、広島ならではのフレンチになっている。
肉は一般的に繊維に沿ってナイフを入れると切り分け易いが、このほほ肉は繊維の向きに関係無くナイフを入れても、容易に切り分けられる。例えとしては適切ではないのかも知れないが、まるでハンバーグにナイフを入れているのではないか、と思ってしまった程。ほほ肉が元々これくらい柔らかいのか、調理法の賜物なのか、双方による結果なのかは知らないが、肉をここまで柔らかく出来るとは驚き。
色の異なる3種類のソースが添えられ、食べる直前にシェフによりメインのソースが掛けられる。。
ニース風サラダ、パン、そしてサツマイモのポタージュも提供された。
サラダは、うずらの卵、ツナ、アンチョビ等、動物系蛋白質の具材も多い。これがニース風の特徴の一つらしい。
コーンやジャガイモのポタージュはよく食べているが、サツマイモのポタージュは今回が初めての感じ。
