鴨、素晴らしい。どうやったのか、素材の味もあるだろうけど、皮は広州系のパリパリ。肉の旨味、旨味、旨味。やっぱり下味と低温なんだろうなぁ。
冷静カッペリーニ、桃の甘みとカラスミの苦味、
対極に離れすぎている気もした、サーモンの低温調理、スモーキー、冬瓜、グレープフルーツのジュレ、冬瓜が必要なのは何故か、よく混ぜて食べないとやや違和感。和牛自家製スモークのカルパッチョとブラッタ？モッツア？の組み合わせ、これもよく混ぜると美味しかった、総じてクリエイティブな組み合わせで定番を新しく感じさせましたが、王道な鴨の焼き物が直球で一番美味しかった。
後は、ロブスタークリームパスタ、これが全く定番では無い、爽やかな一品。ドライトマトで酸っぱく爽やかに、プロシュートの塩気とスモーキーさが香りを変えて海鮮なのにカルボナーラのようなアクセント、主役のエビもしっかりとろみがあり美味い。パスタは食べないのだがこれは新しかった。ワイン、2杯目の白が良かったが、総じてmeets the requirement‥

広島は自粛モードでディナー難民になるまいと必死に仕事を切り上げ、滞在付近のお気に入りの店へ! ドングリでフィードした豚、確かに、クルミっぽい。この前の鴨もそう、素材は圧倒的なんでしょうね、でも肉の焼き方の何たるか、を理解されている感じがやっぱり美味しいのだと思う。
Puniという、イタリアのウィスキーをシメに頂きました。イタリアらしくグラッパっぽくも艷やか、エレガントでフルーティー、いいウィスキーでした。
前回書き忘れたのですが、席数に比べ、コロナの最中、スタッフがとても多い気がしました、勝手な思い込みですが、人を育てようというオーナーさんの意気込みなのだと思いました、だとしたら本当に素晴らしい！です。
