広島駅周辺に来たので久しぶりに伺いました。
20席ほどのカウンターのみです。
《肉玉そば》をオーダー、生地を楕円に伸ばし次第に黄色に変色してきて、キャベツ、もやし、天かす、塩、コショー、魚粉、豚バラ3枚おき生地を少し垂らしひっくり返し蒸します、その間いその麺を茹で後味付けし少量の油で炒めます。
合体して、最後に二黄卵の玉子と！
いその麺と半熟の玉子が混ざりいいですね〜。
食べ終わるとすぐ爪楊枝を出してくださる気配りは素晴らしいです。
