For lunch, I went to Okonomiyaki restaurant "Okaya" near Hiroshima Station. At this time, the store consisted of a man in his prime and a middle-aged woman. No customers. I was guided to the far left of the counter table seat in front of the cooking griddle. There is a basket for luggage. I ordered "B Lunch" (860 yen). The meal consists of Okonomiyaki with soba or udon noodles, one topping of your choice, and cold oolong tea. From these options, I chose soba and squid tempura. I saw the male manager's cooking. Roll out the sticky dough into a thin circle. Its diameter appeared to be slightly smaller. Sprinkle a small amount of bonito flakes on the dough. Place the medium-thick cabbage directly on the griddle, pour a little lard, and sprinkle with the three kinds of flour. Two of them looked like salt and pepper. Fry the cabbage, stirring with a spatula. I thought it was the Kure method, but I didn't stir-fry it very carefully and just put it on top of the dough. Is the Goemon method closer? Then I layered it with thigh bean sprouts, tempura, squid tempura, and pork until the main body was piled up. Turn this over and shape it slightly. Soba is raw noodles. I wonder if it's made by Isono Seimen. Boil tebo. I didn't really time the boiling time, but I think it took a long time. I think it was about 4 minutes. Sprinkle with lard, 4 kinds of flour. I wonder if it's the three ingredients mentioned earlier and garlic powder. They took their time and baked it carefully, unwrapping it, spreading it out, and turning it upside down. Place the main body on the noodles and combine, then place it on the rolled out egg and combine again. Flip it over, sprinkle with the otaku sauce, green seaweed, and sesame seeds. It took about 12 minutes. The sweet and sour sauce goes very well with the chewy, flavorful noodles and fragrant eggs. Although it fell apart a little easily, the vegetables were both chewy and crunchy and delicious. The dough had a crisp texture. Later on, I became a little concerned about how salty it was. Since I was the only customer until the end, I had a great time talking with the two staff members about how to eat Okonomiyaki and Fukuoka Ramen.
