札幌市の大通付近にある「パフェ、珈琲、酒、佐藤 花れ」。
数多くの夜パフェ専門店がある中、こちらはアルコールや珈琲と合わせてカウンター形式
で楽しませるスタイル。本店とは違い「花」とのコンセプトか、ピンクカラーを取り入れた女性視点の内装だ。
この日は珈琲が売りのお店なので、「珈琲と赤果実」に。
コロンビアベースとモカの2種類のミルクアイスと黒コショウのラングドシャがトップ。
ラズベリー等の赤系のベリーのコンポート、珈琲サブレ、ゼリー、グラノーラ、もう一度ベリーの構成。
珈琲の風味のボディがしっかり感じられ、専門店らしい味わいのアイス。まるで珈琲豆をそのまま食べているかのような感覚になりそう。
そしてベリーやゼリー層にも甘みの付与は抑えて素材の本来あるべき酸味を活かした味付け。
バー形式に相応しい大人向けの味わいだ。
