若くて穏やかでユーモアある明るい親方は客の心を和ませる。
美しい白木のカウンターを囲んだ客層も素敵で暫し北海道の味覚、自然、人の素晴らしさに酔う幸せな時間だった。
寿司ネタの素材の吟味も素晴らしく、今回はウニと海老が出なかったのは少し残念にも思ったが、その仕事は東京の名店にも引けをとらない感動の連続。
大変満足だった。
親方は板に向かう仕事には厳しい眼差しを向けているが、私達客の店で過ごす楽しみにもそれぞれの客に応じて繊細に心配りがあり、皆お酒も進み本当に美味しく豊かな時間を過ごせた。
さりげなく、そつのない仕事をしてくれたハンサムな店員さんにも感謝したい。
