Arrived around 11pm on a weekday. The restaurant seemed spacious so I thought I could get in right away, but I was wrong. There was a 10-person wait outside and another 10 inside. I heard some people who seemed to be regulars talking, but it was cold today so there wasn't much of a line, which raised my hopes. The menu names were interesting, such as Echigo (spicy miso), Tosa (light salt), and Mito (rich soy sauce). I ordered a half-size bowl of Shinshu (rich miso) ramen, which many customers were ordering, and Tabelog The bowl arrived shortly after. The soup was rich but not too salty, with just the right balance, and it went well with the chewy noodles. The fried rice was light and fluffy, like the old-fashioned fried rice, and I finished it all in an instant with the pickled ginger. It was a restaurant where I could see why people were queuing.
