昭和29年創業のすすきのエリアに5店舗展開する、圧倒的な人気と知名度を誇るジンギスカン専門店『札幌 ジンギスカン だるま 』の4号店。
店内は最新の排煙設備や専用のロッカーが設置されており、匂いと煙をあまり気にすることなく1人でも気軽にジンギスカンを楽しむことができる雰囲気。
メニューは「成吉思汗」の他、数量限定の「上肉」や「ヒレ肉」、「キムチ」、「チャンジャ」、「おしんこ」が並ぶ。
テーブル席に格納された特注のジンギスカン専用スリット鍋は万全の火加減で準備され、着席と同時に店員が「玉ねぎ」、「長ネギ」、「羊脂」をセッティングしてくれる。
「上肉」は、数量限定の部位。脂身と赤身のバランスが良い部位の厚切りカットが3枚提供される。
お好みのサイズにハサミで切り分けていただくことも可能。
炭火の火力が非常に強いので、肉の焼き加減に要注意！その柔らかさとあふれ出てくるジューシーさが魅力。
「成吉思汗」は、365日欠かさずに仕入れている新鮮な生のマトン肉を使用。毎日開店直前にお店に届く生のマトン肉は焼く直前に肉厚に切り分けられ、1皿に「肩ロース」、「ロース」、「モモ」の3種類の部位が盛られ提供される。
一般的な「マトン」は羊肉独特のクセが強いが、こちらのマトン肉は切り立て＆炭火で焼くためクセよりも肉の旨味が際立つ理想的な羊肉。
真しやかに言われる「マトンは経年羊なので臭みが強い」という既成概念は消え去る味わい。
ちなみにこちらのお店より美味いマトンが食べられる店はそう多くないことも事実。
タレは創業以来変わらない女将自らが仕込む門外不出の秘伝のタレ。自宅で作ったタレを毎日開店前に店に運んでいるそう。
味わいは、比較的あっさりの醤油ベースのサラッと系！複雑な旨味要素に仄かな酸味が特徴で、肉で勝負してるのがよく分かる味。
ジンギスカンビギナーにおすすめの夜中でも頂ける安定の成吉思汗でした。
