いつの日かの数軒目、きちんと歩き（？）案内されたようですね。ちょっと呑み方を飛ばし過ぎました。ワインの味わいは覚えています。そして鹿肉の料理達も…
知り合いに熱心なハンター兼解体師が居て、狩猟後の血抜きが命の鹿肉は、超最良の状態にて色々と味わった経験が多くあります。内ロースと名付けたヒレ肉のような部位は至高でした。…状態の良い鹿肉は高級牛肉にも勝るとも劣らない魅力があるものです。そこに野性味を含めるならばそれ以上。
但し、加工品や手を加えた鹿料理は経験が少ないので、この店での料理はとても魅力的でした。ローストは、もう少しレア感があるほうが良さそうですが、旨味が引き出され、当然雑味少なく親しみやすい味わいで、鹿肉初心者の方には最良な感じです。
ワインのアテに良いな…と感じたのは、自家製生ハム。しっとりトロリとした食感に、まったりとした熟成感のある味わいと程よい塩気のハーモニー。心地よい脂も滲みだし…噛めば淡くジワリと広がる鹿肉の旨味も魅力的ですね。
残念ながらアヒージョの味わいは失念してしまいましたが（食べなかった？）ジビエを気軽に味わうには良い立ち位置かつ料理内容の店ですね。次回機会があれば、酔いが回らない早い段階での利用にて、しっかりとジビエを味わってみたいです。
