2002年創業のパティスリー『パティスリーシイヤ （Pâtisserie SHÏÏYA）』を訪ねます。
屋号はパティシエである椎谷宏一氏のお名前が由来。白いシンプルな建物の中を、スイーツたちが彩りを与えております。奥にはイートインスペースもあり、優雅にケーキたちを楽しむのも可能。ケーキはもちろん焼き菓子も充実しており、テイクアウトやお土産にも選びたいお店になっております。
一番人気という「モンブラン」を。
フランス産というマロンのペーストをブレンドしたクリームが、優しい甘さを演出。生クリームの中にはカシスのジュレが隠されており、その酸味が味の強いアクセントになっております。底にあるサクサクなメレンゲもまた食感のアクセントに。実に完成度の高いモンブランだ。
シェフの思い入れの強い「ミゼラブル」もいただきます。椎谷氏が修行で訪れたベルギーで一番好きなケーキだったんだとか。卵黄がいっぱい入った濃厚なバタークリームが最大の特徴で、これにアーモンドのダックワーズ生地の香ばしさを重ねます。シンプルながら濃厚かつ味わい深いスイーツに仕上がっております。
