醤油チャーシュー麺を注文。
良くも悪くも目新しさはない、昔ながらの旭川ラーメンという印象。
しかしながら、このカンスイの効いた細い低加水麺の香りと食感、ラードや素材の組成を感じるWスープ、程よい塩加減、肉肉しいチャーシュー、柔らかいメンマも、辛めのネギも。熟練のバランス感覚を確かに感じる。弱い出汁に香味油浮かべただけの、素人臭い中華そばなどはとても敵わない、手間暇を感じるお味です。
はっきり言って私にとっては上記の感動はあれど、無個性さ所以の物足りなさを否定出来ないが、ここのラーメンにこそ、至高の口福を感じるオールドファンは沢山居るのだろう。そう感じた。
「昭和ラーメン」の冠を外したのはどういう思いからだろうか
お二人の真摯な仕事ぶりを見てると、一見客の自分も何となく応援してしまうような、そんな魅力に溢れたお店でした。
