ラーメン爐でランチです。
いろり、と呼びます。
発寒南駅近くの建物1階です。駐車場は少し狭いけど5台くらいはいけます。
シンプルな作りの内装。カウンターは6席。テーブル席は4人掛け2つ。ご夫婦で経営してます。
スペシャルラーメンを頼みました。
真っ黒のスープが目立ちます。ただ、いわゆる富山ブラックのような味では無く魚介系スープで全然違う。焦がしラードの効果なのでしょう。スープは油膜で熱がとじ込まれれて熱々です。完全な魚介ではない感じ。豚骨とのミックスかな。これはクセになる味。
西山ラーメンの麺は定番よりは少し細め。スープに合うのは旭川系を連想させるから？
食べ始めて気づくシジミや帆立、イカの数々。
底にあり目立たなくしているが魚介の下支えがこのスープを活かしている。
富山ブラックの入口で長崎ちゃんぽんが出口。いやお見事。
