夜の部が気になっていた 味のしゅうか
何人かで集まって酒宴が催されました。
うまい生ビールで始まり、
白魚の筏揚げをハムッと食べます。
北海道産のアスパラが麺のように細長く切られていますが、
食感が良いこのアスパラ時々食べたくなる仕上がり感でした。
鮑と細目昆布の茶碗蒸し
小樽で今の時期だけ取れる名物的な昆布との事です。
磯の香りの昆布と柔らかな鮑と海からのうまみとが、
キラキラと光る海の波飛沫の如く心に残響を残しました。
ビールの後は、響ハイボール
美味しく飲めるジャパニーズ贅沢ハイボール♪
日本酒もさらりと飲みましたが、和食には日本酒をでした。
自家製味噌唐墨と白海老の乗っけ寿司
ぎゅっと閉まって旨味詰まったカラスミもいいですが、
しっとりやんわりとした食感のカラスミとトロねっとりした海老との融合はこれうまし！
赤酢を使ったシャリもまたいい感じです♪
鰻の白焼き
皮目はパリッと仕上げてあって自家製ポン酢でさっぱりとした味が楽しめました。
薬味の白髪葱がたっぷりと乗せてあってシャキシャキッ！と美味美味！
赤身の漬け
マグロは薄くスライスされていて
あっさりライトな食べやすさのサラダです。
ヤリイカと数の子
楽しめる歯応え対決で日本酒のつまみにグッドな一品
赤貝と大溝貝の自家製梅酢漬け
貝の美味さが引き立つ手間暇かけた和食道の芸術作品的な逸品です。
大根やそら豆もヘルシーオイシーのでした。
ヨモギまんじゅう
蓬の風味がたっぷりからの鰻が今晩は♪
蓬好きには喜ばれそうです。
蛍烏賊と蕗味噌とじゃがいも
海からは蛍烏賊の美味しさが乗っけられて
春の訪れを想わせてくれる地物が大地の恵みを届けてくれました。
猪と筍入り万願寺唐辛子
なかなかに凝った逸品です。
楽しく美味しいひとしなに心弾みます。
手羽毛蟹
オホーツク海の毛蟹の身がびっちりで、
海の幸たっぷりびっくりなおもしろい趣向のこれはもう珍味ですねー
鶏の香ばし美味く仕上げた味わいとマッチングしてました。
蕎麦
大根おろしと山わさびがこんもり乗ったぶっかけそば
ツーンと来る辛味とほのかに感じる節感が〆にいい感じです。
蕎麦が〆かと思いきや
最後に鰻も来ましたー！
地焼きの鰻が乗った鰻飯
変化球的ダブル〆は嬉しいです。
そしてやはり香ばしく美味しい♪
親しみを感じる味乃しゅうかの大将が組み立てたコース料理は、
手間暇かけて時間をかけて、さまざまな和食技巧を駆使して、
その持ち得る持ち味を活かしたことを感じさせてもらえました。
