都会で今時のそば屋は 「ほら、うまいだろう、さあ食べな」 てな雰囲気が満ちあふれているのです。 そんな蕎麦やにかぎって「コシ」と「生煮え」の区別がついていません。固ければ「コシ」と思っています。
ここ、函館の「いしくら」 も固いそばでした。
「もり」 と 「かけ」 を食べました。「もり」はあと十数秒長く茹でて締めれば旨い蕎麦ですが、その旨い蕎麦が生かされずに出てきました。せっかくうまく打った蕎麦なのに、もったいない思いでした。「かけ」は鰹節を前日に下ろしたのでしょうか、それとも錆びた鉋でおろしたのか、臭みがありました。
天麩羅はとなりの客が注文したのを見て、「たぬき」もいただけないなあ、と想像。サラダ油で揚げていると思います。
本来の「そば」を知らない人が客となる函館で、美味しい蕎麦を提供するのは困難が伴います。そば本体は良いと思うので、更に研究を重ねて下さい。
