Even things that would normally be discarded, such as vegetable skins and fish bones, are used to make sauces and fondues. The head of Kasube (stingray), which is commonly eaten in Hokkaido, has been thrown away, but we ask a fishmonger to collect the cheek meat and take it back. Kasbe cheek frites are our specialty, and are a typical menu item that utilizes ingredients that would previously have been discarded.
From fish to meat, vegetables, and fruits, we use local Hokkaido products as much as possible. We are working hard to deepen our cooperation with motivated producers in the neighborhood and to further increase the value of high-quality products to provide to our customers.
