札幌から高速で35分の余市町にある、イタリア料理のオーベルジュ。
道内では比較的温暖で果樹園が多く、海岸が近いことから海の幸にも恵まれている。町内にはワイナリーが15軒。近年入手困難になったドメーヌ・タカヒコなど余市ワインと現地の野菜・山菜のマリアージュが楽しめる。
最初のひと皿から心は山へ飛ぶ。
クルマバソウ茶には桜の葉の香り。
次はホワイトアスパラのスープ。
アスパラの甘みをあえて封印、苦味を強調させてポレンタでとろみをつけた。
春は苦み。冬に溜まったものをデトックスしてほしいという思いがこめられている。
2度目の訪問だった。
今回は北海道の遅い春に芽吹く山菜や、冬眠明け直後の熊などが楽しめた。
土ものの素朴な器に盛られた料理。
どんな味か口に入れるまで分からない。
ヤリイカのひと皿にはタンポポの新芽とフライドガーリック。新芽のマリネされたような酸味とチコリのような苦味が心に残る。
イタリア料理というよりはもはや村井料理・余市料理という趣だ。
地元の山菜を前面に出し、味付けは複雑ながら、見た目は比較的素朴な方に寄せる。
ダイニングの左右に客室が2つ。できればこの客室に泊まりたい。食べてすぐ隣のベッドに倒れ込めるのは得難い幸せだ。
朝食も良き。
