麻婆豆腐を食べ歩いて納得できずに結局自分で研究して作っている自分だが、やはり行ったことがない店には惹かれる。ここは初めてのお店なので、麻婆豆腐と坦々麺を頼む。着丼は早く、どちらも色が赤いのが目をひいた。麻婆豆腐が赤いというのは豆板醤が熟成ものではないということで、坦々麺が赤いというのは勝浦坦々麺のようにラー油が主体なのかなと思った。まずは坦々麺から。麺は普通のラーメンの麺で、スープの塩味が強い。見かけより辛味はなくしかし胡麻胡麻もしていない。白濁したスープの部分を味わうとほのかに胡麻が香る。ときどき麺がほぐれていない部分がある。ニンニクや生姜といった最初に油を通したベースの薬味部分が固まっていることがあり一ショウガやニンニクが口一杯に広がることがある。次に麻婆豆腐。辛味は表面に唐辛子粉が振られている。山椒はない。ひき肉は案外多めだが甜麺醤の味がしないことからあらかじめザオジャンを作っていないのか薄味なのか。ニンニクの葉やニラを入れておらず、最初に炒める香味野菜はネギである。ごま油とラー油はあまり感じられないが、ベースのスープであるガラスープが感じられる。ときどきニンニクや生姜を炒めたかたまりがある。という感じでした。
