2023年の三が日、
支笏湖方面の温泉でリフレッシュした後に
白老町に立ち寄りました。
もちろんお目当ては白老牛。
この日も営業していた生産者直営
ウエムラ・ビヨンドさんでいただきました。
店内は天井も高くて明るく清潔感のある雰囲気が印象的で
スタッフさんの人数も、
年始、席数のわりには意外に揃っていました。
この日いただいたのは、新春の景気づけにと
「王様のサーロインステーキセット」。
通常、150g 8250円が、嬉しいことに
年末年始の特別価格、4125円でで提供していました。
焼き加減はスタッフの方のおすすめでレアに。
前菜のかわいいミニ肉寿司とジュレをいただいた後、
すかさずメインの一皿がやってきました。
しっかりとサーロインステーキをいただくのは久々。
ひと切れずつ、半分ずつにナイフを入れて
噛みしめるとジュワッと白老牛の旨みとほのかな酸味が口の中に広がります。
コース内容が、味噌仕立てのユッケジャンスープ含めて全体的に低温気味の印象だったので、もう少し何か温かみが欲しかったかなと思います。
