釧路は、蕎麦屋の多い街で、その中で、一番の老舗である竹老園 東家総本店に伺った。
この店の蕎麦は、一番粉の更科粉に、クロレラを混ぜ色を薄い緑色にしている。
釧路では、この緑色の蕎麦が多いそうです。
注文は、ざる、かしわぬき(スープ)、 欄切りそばを。
ざるは、緑色の蕎麦に海苔が乗っている。
少し辛めのつけ汁でいただいたが、喉越しがよく、蕎麦本来の香りもあり、流石の老舗の蕎麦である。
かしわぬき(スープ)は、温かいかしわ蕎麦の蕎麦をぬいた物で、出汁の効いた掛け汁で、香り・味ともに申し分ない。
欄切りは、蕎麦に卵を練り込んてあり、少し甘めの蕎麦で、つけ汁も、ざるの物と違い少し甘みがある。
流石の老舗といえる絶品ばかりでした。
