JR三ノ宮駅から北、北野坂沿い中一東ビル2階にあるお店。
カウンター10席、テーブル席。
この日は神戸の料理人たちが夜な夜な集まって、研究に研究を重ねたラーメン研究会 第5️⃣弾。
6月5(土)・6(日)11:00～14:00のみ。
《鶏そば ￥1200》
チャーシューと雲呑が入って、九条ねぎと素焼海苔の細切りが盛られています。
チャーシューはひね鶏、歯応え抜群で噛み締めるほどに旨味が溢れます。
雲呑はナンコツの食感が楽しく、山椒が香る鶏ワンタン。
麺は喉越しの良いつるつるっとした細麺。
黄金色のスープはひね鶏を中心とした清湯出汁、昆布・いりこ・あさりの塩ダレ、宗田鰹の香味鶏油。
《海南鶏飯 ￥400》
鶏もも肉の上にはパッションフルーツとミントがのっていて、下には清湯で炊いたライス。
しっとりとした淡路鶏もも肉にかけられたねぎとごま油のソースが抜群に美味しい❤️
いよいよラーメン研究会も後半に入りました。

この日はホテルピエナ系列のワインバー『クレイエール』のシェフをしていた吉川修司さん作

羊麺 国産ひつじのワンタン麺 ￥1200
羊魯肉飯 羊肉のミニ・ルーローハン ￥400
第6️⃣弾は6月13日(日)『エカイユ』さん
第7️⃣弾は6月20日(日)『鉄板焼 十河』の十河さんの焼きラーメン。
そして最終の第8️⃣弾は第1️⃣弾の『炭ノ火ノTomo』さんが『おんじき』にて、つけ麺をされる予定です。
