神戸 三宮にあるビストロギャロに夕食を頂きに行きました。
こちらの場所は、三宮駅すぐ近くの 燕京ビル 8階にあります。
雑居ビルにあるため、初めて行くと少し分かりにくいです。
店内は、ウッドを基調としたビストロフレンチ店の雰囲気です。
テーブル8席、窓際のカウンター4席、キッチン前のカウンター4席、
計16席のこじんまりとした店です。お客さん同士のスペースがタイトです。
2人でしたら、調理の工程が見られる、キッチン前のカウンター席がお勧めです。
アラカルトで注文しました。
先付
豚肉のリエット、オリーブ、バケット
野菜3種盛合せ 900円
ボイルした野菜、人参、ラタトゥイユなどの盛合せです。
ラタトゥイユは、野菜の風味も豊かでとても美味しいです。
牛ホルモン・すじ・アキレスの煮込み オーブン焼き 1000円
こちらの調理も秀逸です。
こちらのお店は、なんといっても、100g単位から塊で焼いて頂ける肉料理がメインです。
サガリ、サーロイン(100g1500円～) をそれぞれ100g ずつ注文しました。
なかやま牛を使用しています。
広島県福山市が中心の産地です。
植物性の餌を与え、抗生物質を使用せず、自然に近い状態で飼育しているとの事です。
調理法ですが、フライパンに多めに油を入れて強火で表面を焼きます。
その肉を取り出し、少し常温で冷まし、もう一度、強火で焼きます。
その後、オーブンで5分程度、焼き完成です。
サーロインは、一般的なステーキに近い肉質です。
サガリは、横隔膜近くの赤身中心で柔らかい肉質です。
いずれも表面はこんがりと、中はレアーに近く、赤みがかっています。
頂くと、中から肉汁と旨みが広がります。旨い！
こちらの肉は、熟成させていませんが、
火入れや調理も秀逸で、とても美味しく頂けました。
接客は、若い女性のアルバイト店員さんが２人いましたが、気配りが利いていていました。
イタリアンの店で修業をされたオーナーシェフの川添義人さんです。
こちらの店を訪れ、雰囲気、使っている食材、味などを経験して、
とある京都の予約が取れにくい肉料理店がピンと頭に浮かんできました。
そちらの店名をシェフに投掛けると、やはりそちらの店の常連さんでもありました。
京都の人気店よりも、正直、こちらの店の方が旨いと感じました。
神戸に来た際、良心的な代金で、
美味しい骨太フレンチと肉料理が頂ける店として、非常にお勧め出来ます。
