西日本旅行最後は神戸で神戸ビーフ
事前に食べログで予約をして訪問
以前、出張で泊まったホテルのすぐ近くでびっくり(笑)
今回は事前に神戸ビーフのコースをオーダーしておいた
ただ、途中渋滞がひどく遅れる連絡をしたのだが店舗の人の丁寧な対応に感謝
焦らず店に到着することができた
さて、料理は前菜からスタート
彩も野菜の鮮度も申し分なし
海老も大ぶりだし
個人的にはもう少し野菜が食べたいところ
そして続くポタージュ
ここら辺からシェフの腕の良さが光りはじめる
口当たりの滑らかさはもとより、ベースのスープがとても美味しい
次のサラダのドレッシングもそれは同じ
そしてメインの神戸ビーフ
ミディアムレアでのオーダー
赤身の肉質はもちろん、肉の旨味にまずは驚くが、これぞミディアムレアという火入れ
きちんと時間をかけて熱を入れているのでミディアムレアでもちゃんと中まで熱が入っている
最近、ステーキでこの手の火入れを頼むと中が冷たいものを平気で出す店が散見するがやっぱりステーキは脂が解ける温度まで熱がなきゃいけない
だからこの店のステーキは口の中で脂がまとわりつくこともなく肉の旨味に集中できる
そして特筆なのがソース
このソースがとにかく美味しい
肉を楽しむなら塩で食べたいが、このソースが美味しくてソースとも合わせたい
めちゃくちゃ悩ましい
最後のデザートもしっかり素材本位を失わない味作り
日本人が作る洋食をしっかりと踏襲している
これは美味しい
素材も美味しいが洋食店として優れている
ついこの間、銀座の店で失敗しただけに喜びひと塩
