最初から最後まですっきりしていて軽め。
おまかせコース 5800円
①パイ
②トマト ガスパチョ
トマト感強めのフレッシュな濃厚スープ
③ポーチドエッグ
タルタル風味のソースがとても美味しかった。他では見られないありそうで無い料理。
④桃のサラダ
素材を立てて無駄に手を加えない。桃がとても美味しい。
⑤野菜のサラダ
⑥スズキ ニョッキ
スズキのポワレとパスタのニョッキコラボレーション。互いに主張し合わずうまく噛み合っているのが凄い。どちらもパンチのある料理だがどちらも出るところは出て引くところは引く大胆さと繊細さが混在した不思議な料理。
⑦低温調理のポーク
淡いピンク色がとてもきれい。肉の旨味、食感を活かしている。ペロリの平らげてしまうくらい軽やかなメインディッシュだった。
⑧ヘーゼルナッツのアイス
上品な仕上がりで食後に打ってつけ。ヘーゼルナッツの弾ける風味がとても良い。
⑨紅茶
ほっと人心地つける。
総評
大分前の訪問なので忘れてしまった料理もあるが、それでも記憶に残った料理はインパクトがあり、話好きなシェフとの楽しいひと時は未だに忘れられない。料理が独創的で美味しいのはもちろんのこと、飾らない隠れ家的な落ち着いた雰囲気やシェフの人柄が気に入ったので神戸に寄った際には来訪したい。
