お任せ特上に、焼き物(キンキ)と岩牡蠣、自家製カラスミ、ツブ貝を追加で頂きました。今回は事前にお願いしていた淡路の赤ウニを贅沢に1枚使って頂く特別メニューです。赤ウニは近年価格が高騰しており、競にも出ない状況ですが、お願いして仕入れて頂きました。
いずれも見た目に美味しいこと間違いありません、
赤ウニは7月からのわずかな期間限定漁の貴重な物で特に良質の物を仕入れて頂きかなり大粒です。利尻などのウニも大変美味しいですが、赤ウニの濃厚でクリーミーな独特の風味は、他のウニでは味わえません。
他にも素材の良さが際立ち、更にそこに手間を加えて、炙りによる香ばしさや風味、他の食材との相乗効果を引き出しています。自家製カラスミは数カ月掛けて作られ、まろやかで塩気は控えめで、炙りによるコントラストも美味で日本酒が進みます。
今回はお昼にしては、お値段はそこそこしますが、他店では仕入れが難しく、更にお値段も張ると思われるところを、良い物を良心的なお値段で提供頂けて感謝です。
