JR神戸線六甲道駅の南側を神戸方面に１分。高架下を南北に交差する道路を渡って左に南下して３分。本場の出石そばの味わえる花水木さんがあります。出石にもお店を出しておられます。店内は、入って右手にカウンターが5席、右手にテーブル席が三つあります。注文したのは、看板メニューの出石皿そば￥860。たまご、とろろ、ねぎ、わさび、大根おろしの五皿がセットになったものです。
この蕎麦は、1706年に、信州上田から国替えで来た藩主仙石政明が連れてきた蕎麦職人から、出石のそば打ち技術に新技術が加わり、職人の鍛錬によって発展してきました。幕末に、屋台で持ち運ぶため小さな浅い手塩皿にそばを盛った「出石皿そば」は、出石焼きの白磁の小皿に盛られたそばを、徳利に入ったつゆと薬味で食る料理ですが、5枚1組が一人前ながら、地元では、箸を立てた高さの分量が成人男性一人前と言われます。
