あることからかなり良い食材を使われていることがわかったので、先ずはランチで予約させて頂きました。
全個室。
玉手箱。
呼び鈴を写真にある玉手箱に入れて持ってきます。
演出がお好きなようです。
先ずはシャンパーニュ
アンリオ
ブラン・ド・ブラン
ミネラル感はありますが、熟成させたアーモンド香がします。
複雑な香りと爽やかな旨味の融合で美味しいです。
アーモンド香があるのに爽やかな柑橘系を感じるシャンパーニュというのはあまり飲んだ記憶がありません。
シャンパーニュですからノンヴィンテージ（単年の葡萄だけで作らないという意味）ですが、リザーブワイン（混ぜるためにとっておいた熟成した葡萄のワイン）を30%以上使っているようで、だからこそ香りは熟成されたアーモンド香が感じられるのに、飲み口はフレッシュという複雑なことが可能なのでしょう。
前菜

人参のムース
上に雲丹
人参のクオリティが高いので甘みが心地良く美味しいです。
雲丹は少し臭みを感じたので無い方が良かったですが、このようなレシピなのでしょう。
冷菜のサラダ
ちょっと酸味が強過ぎますね。
レシピ的にはこのようなものですということだと思いますが、酸味の強さは味覚を麻痺させるので好きではありません。
何回も申し上げていますが、酸味自体は嫌いではありません。
砂糖の入っていない握りとニュイのピノ・ノワールが好きなので嫌いなはずがありません。
全てはバランス。
それだけのことです。
4種のチーズのクレープ包
マッシュルームの香りが素晴らしいです。
チーズのバランスが良く、少し甘い味付けです。
オリーブオイル
チンクエ コッリ
青リンゴの香りと説明されましたが、生の枝を折った時の青い香りを感じました。
鯵と香味野菜のラグーのパスタ
少し和を感じました。
チッチャのような一体感はありません。
五島列島のクエ
食材はまあまあのレベルです。
少し臭みがありましたが、クエの味は感じました。
こちらも少し和を感じました。
デザート
キャラメル風味のパンナコッタ
無難な甘さです。
自家製アイスキャンディ
ちょっと食べにくいですね。
演出効果を狙っておられるのでしょう。
全体的に万人受けする無難な料理ばかりです。
食材には拘っておられるので美味しいと思いますが、食材と闘っている感じはしませんでした。
城助やチッチャやバールチッチャでは、闘って闘って闘って、こうなりましたというものがヒシヒシと伝わってきます。
簡単に言えば、食材との会話を限界まで追求しましたという味ではないと思います。
雰囲気は抜群、演出も凝っています。
接客にも気を遣っておられます。
ただ、素晴らしいかというと、、。
全個室なので、お金持ちがファミリーで食事をされるには良いでしょう。
勿論、雰囲気や演出を重視するのであれば、デートや記念日には最適だと思います。
TPOによってはニードのあるお店だと思います。
ただ、コスパをどう考えるかは人それぞれでしょう。
