江戸時代中期の宝永3年（1706年）に出石藩主松平氏と信州上田藩の仙石氏（仙石政明）がお国替えとなりました。
その際、仙石氏と供に信州から来たそば職人の技法が在来のそば打ちの技術に加えられ誕生しました。
現在は割り子そばの形態をとっており、この形式となったのは幕末の頃で、屋台で出す時に持ち運びが便利な手塩皿（てしょうざら）に蕎麦を盛って提供したことに始まったと言われています。
その後、出石焼きが始まり白地の小皿に盛る様式が確立されました。
今では、出石は約50軒ものそば屋が並ぶ関西屈指のそば処として知られています。

そばといえば全国的に信州の蕎麦がブランドですが、なんと出石そばも信州からの流れだったんやねぇ〜♫ 感動♫
そりゃうまいわけだ♫
さて、こちら「天通」さん
歴史ある出石そば屋さん。
駐車場あります。
めちゃ狭いので、入れるのも出すのも一苦労。
この界隈のそば屋さんは結構駐車場完備だったり、馬鹿でかい駐車場のある旅館に入り込んでるお店もあったりするので、車で行くならばそこに重きを置くのが良いかと。（ぶっちゃけ、皿蕎麦はどこで食べても大概うまい。及第点以下のお店は界隈ほぼ無いです）
店内小上がり座敷。
コロナウイルス対策で予約は出来ませんが、回転が早いので待たずに入れます♫（ほんまこの辺り50軒以上そばのお店あるから超よゆ〜♫多すぎ！）
お蕎麦は色々メニューありますが、この土地に来たならば
◆皿そば 一人前 5皿 薬味付 900円
追加 一皿 150円
で、10枚セットオーダー♫ 1650円也。
しばらくして、薬味の生卵、山葵、とろろ、ネギ、麺つゆが着卓。
麺つゆに生卵入れて山葵とネギ。
茶器の半分ちょいが理想。
そして、皿蕎麦が次々来るのでひたすら食べる♫
少し色は薄いですが、そばの香りが噛むたびに口の中で漂います。
手打ちならではの歪な形のそばも美味♫
あっという間に10皿。
あとは、蕎麦湯でほっこり♫
豊岡に来たら出石そばは外せんな❤︎
