コースとして美味しい
但馬牛の個人ブランドである但馬玄というお肉を使ったレストランです。但馬牛はほかの和牛より不飽和脂肪酸が多く、低い温度で溶けるので胃にもたれません。魚の脂肪と同じです。但馬玄はさらに低い温度で溶けるそうです。確かに、アッサリした感じでサーロインだと軽く200gぐらい食べれそう。きょうはサーロインとコサンカクをいただきました。サーロインは柔らかく文句なし。コサンカクは歯応えありますが赤身の味がこれもさっぱりいただけました。コースでは先付て、ローストビーフや荒切りのハンバーグ、モツ煮込みがありとくにハンバーグ美味しい。コンソメスープも美味しい。とくにじゅんさいを入れているところがシェフの腕かな。ただのステーキ屋さんではなくコース料理として美味しかったです。

但馬牛のプライベートブランドである但馬玄がいただけるお店です。但馬玄はとてもあっさりした脂なのでいくらでも食べれそうなお肉です。とても上品な味のお肉です。でも、コースの料理が美味しい。先付けのハンバーグ、スジ煮込み美味しい。何よりコンソメスープは頭から被りたいほど美味しい。シェフ素晴らしい。ところで、本日のお肉A5-12でした。ヒレステーキ追加してしまった。明日から死ぬ気で働こう。
