``Sakashu Honten'' is about 10 minutes from JR Mito Station. I heard that it was a stylish restaurant where you can drink Japanese sake, so I visited. The storefront and entrance are just as rumored. The interior is fairly dimly lit and has 18 seats, including 6 counter seats, 6 tables for 32 seats, and 3 sunken kotatsu. It's an adult atmosphere. I was guided to a counter seat and first checked the sake menu. Surprisingly, there are about 100 brands of sake from sake breweries in Ibaraki Prefecture alone. As expected, ``Ibaraki Local Sake Bar Tsukuba'' is being opened at TX Tsukuba Station. The menu has a simple explanation of each brand, so it's fun just looking at it. First, I ordered a glass of Hinode Tsuru. As for the dish, I was told that sturgeon is recommended, so I ordered sashimi. Other sturgeon dishes included carpaccio, grilled Saikyo miso, and salt-grilled Harasu (limited quantity). The young sturgeon are hatched in Tsukuba City and raised in Sakuragawa City, and 5-year-old males are used so that it is possible to distinguish between males and females. The sashimi had a unique chewy texture and was very delicious. We are very particular about the ingredients we use, such as our beef being Hitachi Beef, our pork being Rose Pork, and our fish being purchased directly from fishermen in Kitaibaraki City. We are also a certified store that handles Ibaraki local fish. The "opening of the eyes" was bigger than I expected, and I felt the deliciousness of the fat. "Fried Natto" was mixed with miso, making it easy to eat. ``Mochi Lotus Root Isobe Maki'' uses lotus root, a specialty of Ibaraki, and is cooked to have a texture similar to mochi. We also had ``rose pork spring rolls with meat miso'' and ``Okukuji shamono fillet grilled over open flame.'' For sake, we will compare local sakes from Ibaraki such as ``Mamukai Shosen'', ``Matsumori Aku Daikan'', ``Tsumugi Bijin'', and ``Hititoriko''. I was able to talk to the store manager about various things and had a great time. I'll visit you again.
