水戸警察署から程近い所にある、元小料理屋が営むお店がある。
元小料理屋の店主のこだわりは半端ない。
全てに誇りを持っており、手抜きは全く感じられない。
ランチは2種類だけ。
800円の弁当と900円の定食のみ。
その二つを注文。
調理場に立つ店主の生き様を感じる所作に心が揺れる。
共に日替わりなのだが、手間をかけたその味は芸術の域である。
弁当はタコと白身魚を練り上げたフライ、サバの味噌煮、煮物、酢の物、さつま揚げにキャベツの千切り、なめこと豆腐の白味噌味噌汁。
特にタコと白身魚のフライはタコの歯応えと白身魚のプリプリ感が癖になる食感で、白米がより甘く感じられる。
定食は手作りのクリームコロッケに鶏の味噌焼き、サバの生姜を効かせた煮付け、野菜の水炊き、更に野菜あんかけのうどん、前述の味噌汁がついてくる。
クリームコロッケは周りサクサクでありながら、中身はトロトロ、まったりしたクリームが口の中で溶けてパラレルワールドを作り出す。
普通では絶対考えられないコストパフォーマンスであり、その量が全てを物語る。
だから平日であっても並んでも食べにくるお客さんが絶えることは無い。
土日は予約しなければ入店すら出来ない。
味のこだわりは保証つき。
正に職人たる所以である。
残念なのは入荷する食材に店主が納得しないと営業日でありながら、お店は開かない。
そのプライドは並ではない。
