Sheep Sunrise has excited sheep lovers immediately after its opening, and even made people who don't like sheep fall in love with it. Recently, a lamb hotpot specialty store opened in Tsukuba, so I visited it with my friends. The contents are very unique, and the high-quality taste is unique to the Sheep Sunrise series. The meat is very delicious, as it is made by purchasing a whole rare domestic sheep and aging it for about two weeks. At the same time, it is also attractive that the cooking is done in a way that does not destroy the flavor of the high-quality meat. In other words, the soup for the hotpot is well thought out. The style is to taste four types of soup prepared and choose two, but it is inevitable that you will have a hard time. The soups we had this time were [Meeting of Lamb and Chikusei Tomato] and [Medicinal Food White Soup with the Fragrance of Gokapi and Cocoa]. The former is a punchy combination of the umami of the sheep bone and tomato, and it goes without saying that it goes well with lamb. The latter is a medicinal dish with good cocoa in addition to Medicinal Food properties. At the tasting stage, the soup seemed sweet, but when it was served with lamb, the slight bitterness worked to elevate it to an impressive flavor. Both the ingredients and the soup were good, and the fact that they were combined even more than when eaten separately is proof of a high-quality hot pot. This is a restaurant that I would recommend to anyone who likes hot pot dishes. The domestic lamb used this time was from Esashi, and the cuts were the loin and belly. The loin was incredibly tender, flavorful, and had an elegant aroma. The belly had a strong fat content, which went well with the sweetness and slight bitterness of the cocoa soup. The slight bitterness tightened the flavor, making it unexpected, and also highlighted the contours of the meat's flavor. Of course, the lamb from overseas was delicious, and the fact that the course was run by changing the cuts used is a charm that is characteristic of Hitsuji Sunrise. It is unlikely that there will ever be a restaurant that combines all of these elements: a lamb hot pot specialty restaurant, domestic lamb, and hot pot served by staff. However, the pasta served with the soup from the hot pot you can choose at the end is interesting, but if it isn't emulsified it becomes a Showa-era soup pasta, so I hope they will improve it in the future!
