僕が鳴子そばさんで食事するときは、昼夜問わず、佐藤水割りを呑みながら、〆にそば・うどんを頂きます。
お通しに、蕎麦のかりん糖と野沢菜が出ます。
特に野沢菜は塩加減が丁度良く、みずみずしくて美味しいです。
佐藤(黒)のつまみに、板わさ、ゲソ唐揚げ等、その日の気分によって注文します。
そして、メインの蕎麦は、シンプルに味わいたいので、せいろ(570円)で頼みます。
麺は細めで平打ち、コシと甘みがあります。
麺自体を味わうため、つゆをつけないで食べてみたりもしますが、つけなくても麺の味を充分感じます。
つゆは、甘めで味濃いめです。
そして、最後の〆に、つゆを蕎麦湯で割って、風味を楽しみます。
ざるそばも、海苔の風味が合わさり、一層味が引き立ちますが、僕はシンプルにせいろそば・うどんで食べるのが好きですね。
