先日、金沢に一泊旅行した際、初日のランチでお邪魔したのが、金沢駅西口からタクシーで3千円ちょっとの金沢港に程近い宝生寿し。
僕の中では寿司屋を三形態に整理しているのですが、一つ目は仕込みに徹底的に手を掛けた江戸前の高級店で、「鮨」と表記されてるところ。ネタはお店の所在地に関わらず全国から仕入れており、醤油差しが置いてないことが多い。二つ目は仕込みは程々で、大衆店から準高級店までレンジが広いけど、それだけにお店探しが楽しい。三つ目はシャリの上にネタを置いているだけで握ってないから傾けるとネタが落ちる。
宝生寿しは二つ目の形態で、JFいしかわが推奨するだけあって金沢ならではの地物を中心に楽しめる歴史あるお寿司屋さんです。
おまかせランチコース12貫に、にぎり2貫とノドグロの塩焼きを追加し、日本酒二合と共にいただきました。
最初、板さんが僕ら夫婦に警戒していたのか心を開いてないようでしたが、徐々に打ち解けてきて、寿司ランチを楽しむことができました。
