The first visit will be in 2023. We enjoyed spring at a Japanese restaurant in Ishikawa. The name of the store is "Yamanoo". At the back of Higashi Chaya District. A quiet welcome awaits you at the foot of Mt. Utatsu. The large hall that Mr. Nakai led us to was very atmospheric, even though we were all seated together. After all, fish dishes that are made with a little extra effort are really appealing. Next is Jibuni. You will be smitten by the wonderful Jibuni. What's amazing about it is how thick the duck loin is and how well it's cooked. The thick duck meat is rare and soft, yet easy to cut into pieces, and when mixed with the jibuni bean paste, it has a strong flavor. Of course, the "sudare-fu" and shiitake mushrooms are perfectly seasoned. But what surprised me the most was the presence of rolled yuba. When the evil magistrate twirls his obi and the woman unwraps the rolled yuba, as in the comedy story, ``Please forgive me, ah~re~'', the yuba spreads out more than expected, making it perfect for scooping up the bean paste. It’s delicious! The bean paste has a strong sweetness, so the taste change with wasabi is also good. Whenever I see Jibu-ni at a restaurant in Kanazawa, I always order it, and Yamanoo's Jibu-ni is the best. For sashimi, enjoy the sole, which is deeply saturated with the flavor of the kelp. It's so luxurious♪ The pot-cooked rice is bamboo shoots. The bamboo shoots are cut into 1cm squares and have a delicious crispy texture. The scent is of tree buds. The flavor works well with the light fried rice that was cooked with it. There are many appetizers to choose from, and the pot-cooked rice is voluminous, so you'll be full. Since I was full, I took some of the pot-cooked rice home and when I opened it at the hotel, I upgraded it to `` Onigiri shoot rice balls.'' I was surprised at how much effort it took.
