金沢到着後の最初のお食事はいつも弁慶さんの寿司カウンターで。
平日は1000円お得なコースがあり、さらに好きな寿司を追加するスタイルが私は好きです。
まずは、サッポロエビス生ビール中
その後日本酒で能登応援。
いろどり 平日限定 4000円
先付け 能登の岩もずく
もー、本当にシャキシャキで美味しい。
ポン酢も丁度いい。甘すぎず、酸っぱすぎず。
寿司
▪️なめら (マハタ)
1週間寝かせてるとのこと。
▪️甲いか
塩とすだちで。
まさにねっとりとしたイカ。
▪️甘エビ
卵とミソのせてある。
味噌は卵黄で固めてあるとのこと。
ねっとりかつ甘みもあり、今までで1番好き。
▪️鯖の棒鮨
肉厚の鯖の下に忍ばせてある胡麻、生姜など
とっても良いアクセント。
▪️太刀魚
梅肉と柚子で
皮だけさっと炙ってあり、太刀魚の身は昆布締め
これは食べたことがない太刀魚！
とっても上品。
▪️東京湾のマグロ
2週間熟成
東京湾のマグロ？？を金沢で。
▪️桜ます (本マス)
ネギと生姜を忍ばせて、桜ますは漬けにしてあるとのこと。
大トロの部分でこちらももちろん美味しい。

たたきで漬けにらしてある。
▪️フグの白子
フグの白子は裏漉ししてあり、柚子しゃりの上にかけられている。

具はシンプルにわかめ、ねぎ。
前回のことを覚えて下さっていることが、メニューやサービスなどで随所に。気持ちの良い接客をしていただきました。
何回訪れているか、10回は行っていると思いますが、今回が今まで1番美味しかったかも。
